Chick-A-Dee Maryland Magic (Easy BBQ Style)

Seriously, these Chicken Marylands are ridiculously good. Our Chick-A-Dee rub makes 'em unbelievably tasty, and cooking them on the Weber? Forget about it! Perfect for a chill backyard BBQ or just because you deserve some awesome chicken.

What You'll Need:

  • 4-6 Chicken Marylands (legs & thighs still together)
  • 3 tbsp Chick-A-Dee Rub
  • A drizzle of olive oil

Let's Do This:

  1. Rub-a-Dub-Dub: Get those Marylands covered in the Chick-A-Dee rub. Don't be shy – really get in there and make sure every bit of chicken is coated, even under the skin. That's where the magic happens!
  2. BBQ Time: Fire up your Kettle BBQ for some indirect heat. Basically, you want the coals or heat source off to the side, so the chicken isn't directly over the flames. This way, it cooks nice and evenly without burning. Aim for a medium heat (around 180°C / 350°F).
  3. Grill Time: Give the chicken a quick brush with olive oil. Place the Marylands on the grill, away from the direct heat. Close the lid and let 'em cook for about 45-60 minutes. You'll know they're done when a meat thermometer reads 75°C (165°F) and the juices run clear. Seriously, a meat thermometer is your best friend here – no guessing!
  4. Crispy Skin Bonus: Want extra crispy skin? Move the chicken over direct heat for the last 5-10 minutes. Keep a close eye on it, though, so it doesn't burn!
  5. Rest & Feast: Take the chicken off the grill and let it chill for 5-10 minutes before you dig in. This makes it extra juicy and delicious.

Pro Tips & Remixes:

  • Chuck some wood chips (applewood or hickory are great) on the Weber for a smoky flavour bomb.
  • Serve these bad boys with whatever you're craving – grilled veggies, corn, a killer salad… you name it.
  • Leftovers? No problem! They'll keep in the fridge for a few days and are awesome in salads or sammies.
  • Feel free to use more or less Chick-A-Dee rub, depending on how much flavour you're after.
