Grilled Chicken Taco Time

Tacos! Seriously, is there ANYTHING better? We think not. And today, we're firing up the barbie for some smoky grilled chicken tacos. Plus, we're adding a sweet and spicy apple & jalapeno coleslaw that'll blow your socks off. Get ready, folks, this is gonna be a ripper!

What you'll need:

  • Chicken: 500g Chicken Thighs (dark meat = flavour bomb!)
  • Spice Rub: Chick-a-Dee - 3 TBS (because duh!)
  • Coleslaw:
    • 1 Green Apple, julienned or grated (get those apples ready!)
    • 2 Jalapenos, finely chopped (seeds out if you're a wimp, keep 'em in if you're a legend)
    • 1/2 Red Cabbage, thinly sliced (the purple stuff, you know the deal)
    • 1/4 cup Mayonnaise (the good stuff)
    • 2 TBS Lime Juice (freshly squeezed, obviously)
    • 1 TBS Honey (or Agave, if you're feeling fancy)
    • Salt & Pepper (just a pinch, or more if you're into that)
  • Tacos: Corn or Flour Tortillas (your call!)
  • Toppings: Whatever floats your taco boat! We're talking Cotija cheese, sour cream, extra jalapenos, coriander... you get the picture.

What you need to do:

  1. Fire it up! Get that barbie roaring. You want medium-high heat, those coals glowing like they mean business.

  2. Chicken time: While the barbie's getting hot, rub the chicken thighs with the Chick-a-Dee spice rub. Get it in every nook and cranny. Let it chill for about 15 minutes while the barbie does its thing. Flavour town, here we come!

  3. Coleslaw action: Toss the apple, jalapenos, and red cabbage in a bowl. In another bowl, whisk together the mayo, lime juice, honey (or agave), salt, and pepper. Taste it, tweak it, make it perfect. Then, pour it over the coleslaw and mix it all up. Stick it in the fridge to get nice and cold.

  4. Grill master: Throw the chicken thighs on the barbie. Cook 'em for about 5-7 minutes per side, until they're cooked through and have those sexy grill marks. Chicken thighs are the BEST, they stay juicy even when they're hanging out on the barbie.

  5. Tortilla time: Warm up your tortillas on the barbie or in a pan. Don't skip this step, warm tortillas are where it's at.

  6. Taco party! Load up those tortillas with the grilled chicken, top with the apple & jalapeno coleslaw, and add all your favorite toppings.

Boom! Flavour explosion! Smoky chicken, sweet and spicy coleslaw, all wrapped up in a warm tortilla. This is what taco dreams are made of.
